March Madness Appetizers: Baked Nachos!

One of the reasons I love the month of March is for March Madness and all of the March Madness appetizers! I am a huge college basketball fan, specifically KU, so I always look forward to this time of year. There’s always something to watch on TV, and more importantly, there’s always an excuse to make snacks. If you aren’t a sports fan, surely you’re a snacks fan?! There’s no better opportunity to whip up all of the snacks that you wouldn’t make on a typical Tuesday evening or Saturday afternoon. And there will be zero judgment for devouring an entire pan of nachos.

Just like we split our nachos right down the middle, Chad and I have a little rivalry during the month of March as well. Chad is a Syracuse fan and loves to remind me of the year Syracuse beat KU in the National Championship. We will never agree on which team is better, and we will also never agree on what belongs on nachos. So, if you’re sharing nachos with someone who thinks jalapeños are too spicy and has a strong aversion to beans, you don’t have to sacrifice your delicious mound of spicy black bean goodness with this recipe!

I have no problem admitting that every single time Chad and I make these nachos, I eat every single last chip on my half. Maybe I’m nacho obsessed, but I could probably eat these at least once a week. They are so easy to make and honestly you can add any toppings you love, and you could even make them different each time! There’s no set list of ingredients, but I absolutely recommend trying Que Pasa tortilla chips as your chip of choice!
